Cheez got its start in my kitchen. I used to just make it for myself and the occasional friend that would stop by. At Glorious Artisan Bakery, we started setting it out to sample with the artisan breads and it quickly became apparent that we were on to something. People's face would light up as they tried it and over time it developed a sort of underground following. Before long, people who I had never met before were stopping in asking if they could buy it.
I used to just make Cheez because it tastes freaking delicious. These days, I make it to provide people with a healthy and ethical alternative to traditional dairy products.
